I didn’t care for broccoli much before I ate at my husband’s grandmother’s house. She makes a great casserole with it that I really like and I’m sharing here.
1 pound fresh or frozen broccoli florets
1 can cream of celery soup
1 cup mayonnaise
1 egg
½ cup parmesan cheese
Heat oven to 375 degrees F
Steam broccoli until cooked through
In a mixing bowl, mix soup, mayo, egg and ¼ cup of the cheese until thoroughly mixed
Put broccoli in a 2qt casserole dish
Pour mixture over the broccoli and use a spatula to settle it. You don’t want the broccoli sticking up out of the top, but you want to get the mixture so that it fills in the majority of space between florets.
Cover the casserole dish and bake for about 25 minutes or until bubbly.
Remove casserole from oven and remove cover
Top casserole with remaining cheese
Bake again for 10-15 min until top is golden
This recipe serves about 4 people. If you or your guests really like it, it doubles nicely.
